This simple recipe is perfect for hot days when you CBFed cooking. Our kids love beetroot and will gobble this dish up.
- ½ a small wedge of Watermelon, diced
- 2 Beetroots, diced (the ones in the plastic not the sweet sugary ones in the tin!)
- ¼ Red Onion, thinly sliced
- 30g Crumbled Feta
- ⅛ Bunch Of Mint, leaves only, sliced
- Olive Oil & Balsamic to dress (a splash)
- Simply toss all the ingredients together and toss.
- Add a spash of good quality oil and vinegar.
