One of my main focuses this year is to reduce waste, both in my kitchen and in other areas of my life. These chips are a great way to avoid waste while cooking and they taste GREAT with a crisp white wine!

- Peelings from:
- Sweet Potatoes
- A drizzle of oil
- Pre heat oven to 200 C.
- Drizzle oil over the peels and use hands to rub through evenly.
- Line 1-2 baking trays with baking paper depending on volume.
- Spread the peelings in one layer on the trays, and bake for about 15 mins until crisp checking every 5 mins and giving them a mix around so they don't burn.
- Add salt if you need it, but they are so tasty without!
