This dish will save you! The sweetness of the Pumpkin will entice kids and the barley makes it hardy enough to fill everyones bellies.
Add extra stock/water if you want it more watery or to go a little further. Barley is very absorbent so this extra water should be added just before eating.
- 1 litre veg/chicken stock
- 1 small butternut pumpkin, peeled and diced
- ½ cup pearl barley
- Chop pumpkin in to small pieces, add it to a saucepan with the stock and barley.
- Simmer until the barley is cooked and the pumpkin is soft enough to break down totally when you stir it.
