Some nights you just can’t get a meal together fast enough huh?
Kids are screaming for dinner, you just cbfed. This meal can be ready in 15 mins with a few simple ingredients and make everyone happy.
Add some dumps if you like, or some extra veg x
15 min Chicken Noodle Soup
Ingredients
- 1 tablespoon sesame oil
- 1 onion, sliced
- 3 cloves garlic, crushed
- 2 cm ginger, minced
- 3 tablespoons soy sauce
- 4 cups chicken stock
- 2 chicken breasts, halved
- 450g Hokkien Noodles
- 2 zucchini, zoodled
- Chili, coriander, spring onions etc to taste (optional)
Notes
Heat the sesame oil, then add the onion, stir for a min to soften then add the garlic and ginger, stir until fragrant.
Add the soy, stock and chicken breasts, bring to the boil then simmer for 10 mins.
Add noodles and zucchini and simmer for 3 mins, remove chicken, slice and return to pot.
Divide and garnish with what suits!
