- 300 g pitted dates
- 150 g dried apricots
- 1 tablespoon shredded coconut PLUS 3 extra tablespoons for rolling
- 1 tablespoon vanilla essence
- Blitz all ingredients other than the coconut for rolling in a food processor until it comes together in a lump. The time it takes will be dependent on your food processor (please if it is struggling/getting
- hot add water one tablespoon at a time, you may need to chill the mix before rolling in this case).
- Roll into 12 logs, then roll in coconut and store in an airtight container in the fridge or cupboard.
