This is my first meal planner for 2017. WOW and we are halfway through Jan already!!
We have eaten out a LOT the past few weeks and I am definitely feeling a little bloaty and blah. My focus for this weeks meals is to keep it simple, GET BACK IN THE KITCHEN, and also make things that are lower in cals for me but make the kids happy too. Please read the little notes I make for substitutions and ideas xx
Monday is going to be pretty warm in these parts so I think I will get this prepped and ready early and hit the beach! Just a quick zap to heat and we are done. I plan to have mine on its own with a little chilli and sour cream. The kids and Micka will prob have burritos. I find wrapping them up with some cheese and sour cream then toasting them so it is melty tricks them into thinking there is meat involved. KEEP THE LEFTOVERS FOR SATURDAYS BAKED POTATOES!! Freeze them in a little container 😉
This dish sounds WAY more fiddly than you expect, and is a great way to add some sneaky veg into your kids diet. I always serve it with a Greek salad and chips 😉
If you don’t have any teriyaki sauce lurking about honey and soy (a couple of tablespoons each) is a good alternative. Use flat mushrooms instead of beef for a lower cal vegan version. Our kids love noodles so I will stir them in at the last minute..
This easy tuna bake is a real hit with our family, the zucchini kind of melts into the rice and is gobbled up unknowingly.. For me I will add extra zucchini at the end of the meal to reduce the rice intake!
I wish I had a better image of this dish, and plan to take one once I bake it this week. This one doesn’t do it justice!! Our kids LOVE it and it is a bit of a modern twist on an old classic. I am serving it with steamed carrots, beans and corn.
This dish is SO bloody simple and great for using up leftovers, I am going to pop it on in the morning before dog training so that dinner is ready after we do all our running around in the arvo. I am using up the leftover Veg Con Carne (if I have some!). White potatoes have received a bad wrap of late but they are equally as good for you as the sweet ones, and cooked like this they are not too high in calories!
And finally a pasta bake to get everyone in a food coma for a movie and to be tucked up into bed!
