Food is fuel and this week I am ramping up the carbs a little as our kids are TIRED. Winter and a busy term has us all in need of a holiday.
MEAT FREE MONDAY
Our girls love a stir fry, it is a great flavorful way to get them to try new veggies and the ones they recognize already. You can add chicken OR tofu or just have veggies. If there is a curry paste in your fridge that is mild, chuck a spoon of that it and it will lift it a little more, but its good without too.

This dish is SUPER yum and really easy. We will sub the barley for some brown rice as we are gluten free at present 🙂
If you have leftovers it goes FABULOUSLY with eggs for breaky. We make sure we use a mild chorizo as our kids are not fab with chili.. Sub carrot for squash if you can’t find any too..
IF you plan to make the Pea & Ham soup tomorrow just add an extra onion, zucchini and carrot in to the mix while starting this, so you can just chuck the already softened veg in your slow cooker the next morn!

Last night I softened some extra veg to throw in the slow cooker before I leave for the day, I have meetings and want to make sure dinner is ready when we get home from swimming.
This is an oldie but a goodie!
I double batched this Chili Con Carne last week, I just add corn kernels, pasta and some cheese on top.

This dish is a little more fiddly than the others on the list but perfect for a Friday night in.
Lamb mince is often forgotten but has a lovely flavour!
Use rice instead of Rissoni if you like 🙂

Comfort food!! This dish is great for a slow Sunday, but is also easy to prepare and quick to make.
We will have it with sweet potato chips, just cover slickes of sweet potato in a little oil and bake alongside the pie.
If you think you might follow next weeks plan Veggie Burgers are Mondays dinner. They require some sweet potato so cook an extra and keep it aside!
