How the mighty have fallen.
But some nights we have more than one activity now and for someone like me, that is scatterbrained, it gets late if I am not organized or ready ahead of time with meals.

I have the chips pre cut (leave them soaking in water, or coated with oil) and just pop them in the oven when you walk in the door. They take about 25 mins to bake so chuck the kids in the shower and get them reading.
This is a REAL winner in our house, and does work with just veggies if you are keen. The flavors are simple but the mix makes for a really yummy meal for the whole family!
I usually chuck a stir fry on the list when we are running crazy, they reheat well also and sometimes if we have leftovers I wrap them up in tortilla for lunches the next day. I will separate my portion and just add mushrooms.
Not all kids will eat fish but salmon is usually one they will try. If they are not keen a cheesy omelette is FAB for a night on the run. Ready in under 10 mins and perfect for little tummies.
Y’all know this one by now! Change it up and serve it with creamy mash if you feel the vibe.
One of the top 10 meals in our home is the platter. It is AWESOME for getting fuss pots to try new things, and I just keep what is left for lunches during the week!
