Right, not everyone can eat salmon for breaky. But I sure can.
Protein hit, low in calories and high in Omega 3’s. BRAIN FOOD!
- Olive Oil Spray
- 1 large bag of baby spinach
- 4 x 150g portions salmon
- 4 free range eggs
- Sea Salt & Pepper
- Pop a spray of your oil in a fry pan and wilt the spinach. Set aside.
- Heat the rest of the oil in the pan and add the salmon on one side of the pan. Cook on one side for 1-2 minutes, flip then repeat. One the salmon is done, fry the eggs to your liking.
- Arrange spinach on the plate, top with spinach and egg and polish it off!
